Salamanca is a place to lose yourself and your senses. A paradise to enjoy hefty and nutritious main courses such as Guijuelo cured ham, Iberian cold cuts, the traditional “hornazo” or the “farinato” from Ciudad Rodrigo; stews and hotpots with lentils from La Armuña, or chickpeas from Pedrosillo; second courses with Morucha or Charra veal, and desserts elaborated with cheeses from Las Arribes...and all washed down with wines from Arribes del Duero or from the nearest mountains. Come into this high quality pantry and enjoy the good food! Many of the most traditional products of Salamanca have Protected Designation of Origin, Protected Geographical Indication and Certification Mark.

Oil. Extra-virgin olive oil

Fruity, dense, with an intense fragrance and spicy touches. This is the extra-virgin olive oil elaborated in the natural parks of Las Arribes and the Sierras de Francia and of Béjar, which adds singular notes to the prized olive juice.

Cherry of Sierra de Francia

If there is a fruit that identifies Salamanca, it is the cherry. Most of the villages, as Madroñal, Villanueva del Conde, Sotoserrano, Garcibuey or Cepeda, have small familiar exploitations that in 2007 led to the creation of the Certification Mark, Cherry of the Sierra de Francia.

Hornazo of Salamanca. The best traditional flavour

Fiesta and hornazo go frequently together in Salamanca. But the real celebration that gathers both is the Lunes de Aguas (Watery Monday), when local people go out for picnic to celebrate the end of Lent and Holy Week.

Farinato

The farinato is one of the products you can try if you travel to the region of Ciudad Rodrigo.

Arribes Cheese. Sheep raw milk

The north-east landscape of Salamanca, dotted with forests of oak trees, oak groves and croplands, turns into terraces by the river Duero and its canyons.

These particular conditions make pastures and scrubland vegetation ideal for any kind of livestock.

Iberian products of Salamanca. Certified quality

Iberian products of Salamanca mean quality. This Certification Mark, recognised in 2005, offers selected Iberian products of Salamanca, in particular steaks, chorizos, salchichones, cured hams and pork shoulders.
